Sébastien Louvion is Chief Regulatory Officer at Standing Ovation, a French Foodtech Company founded in 2020 and based in Paris.
He also currently serves as President of Food Fermentation Europe, the European trade association for advanced fermentation technologies for food and feed.
A lawyer by trade, Sébastien has been supporting product innovation and defending consumer safety in the food industry for over 25 years.
Sébastien started his career at Keller and Heckman LLP in Washington D.C. and Brussels, specializing in Food Law practice.
In 2006, he joined top tier international law firm Mayer Brown where he advised businesses on
on product compliance across a wide spectrum of industries and regions, keeping a focus on food and life sciences.
From 2015 onwards, Sébastien moved to in-house counsel positions within two food industry world leaders, with a Senior Food Law Manager position at Danone, followed by a mission within the legal department of General Mills France.
In 2022 Sébastien joined Standing Ovation, where he focuses on unlocking market access for the company’s precision fermentation caseins in compliance with applicable regulations.
Sébastien has been on Food Fermentation Europe’s Board of Directors since the company joined the association shortly after its launch in 2023. He also has been serving as President of Food Fermentation Europe since December 2024.
